When did ServSafe certification become required in Colorado?
The Colorado Retail Food Establishment Rules (6 CCR 1010-2) were adopted on January 17, 2024 and took effect March 16, 2024, bringing in the 2022 FDA Food Code. Section 2.3 D delayed one part: Food Code subpart 2-102.12(A), the certified food protection manager requirement, became effective March 1, 2025.
Colorado didn't add its own wording to that section, so the Food Code's rule and its accreditation standard apply as written.
Who enforces it
The rules count county and district boards of health with delegated powers as the regulatory authority. So your local health department inspects your business and can tell you whether it falls under the requirement. Denver has its own Food Establishment Regulations, revised in April 2017, so check with the city if you're there.
Getting certified
Colorado doesn't issue its own certificate in these rules. You take an accredited exam, such as ServSafe Manager, NRFSP or StateFoodSafety, and the provider issues the certificate. These rules add no renewal period, so you renew on your provider's schedule.
