Who needs a CFPM in Virginia?
Section 12VAC5-421-55 says at least one employee who has supervisory and management responsibility and can direct food preparation and service must be a CFPM, shown by passing a test that's part of an accredited program.
Places that serve only non-TCS food are exempt, and so are places that only reheat or cold hold commercially processed, fully cooked TCS food. Those exempt places can't cool TCS food. The rule doesn't give a number of days to comply.
Does Virginia accept ServSafe certification from any provider?
Section 12VAC5-421-65 accepts programs evaluated and listed by a Conference for Food Protection-recognized accrediting agency. VDH points to the ANSI list. One VDH health district lists ServSafe, NRFSP, 360training/Learn2Serve, StateFoodSafety and others as recognized programs, and asks for your certification with any application for a new, renewed or temporary food facility.
VDH's CFPM page doesn't issue a Virginia certificate or name a renewal period, so your certificate lasts as long as the provider that issued it says.
Virginia's Food Code
VDH says the 2021 Virginia Food Regulations follow the 2017 FDA Food Code. Ask your local health district if you're unsure whether your business is exempt.
