Where is ServSafe certification required in New Jersey?
Rule 8:24-2.1(b) says at least one person in charge in a Risk Type 3 food establishment shall be a certified food protection manager. Risk Type 3 includes full-service restaurants, diners, commissaries, catering operations, hospitals, nursing homes and preschools.
The state's Chapter 24 FAQ says one CFPM per establishment is required, in Risk Type 3 establishments only. The CFPM doesn't have to be there all the time, but a designated person in charge must be.
Which certificates New Jersey accepts
The exam must come from an accredited certifying program recognized by the Conference for Food Protection, and you keep it current by following that program's renewal rules. The Department of Health says it accepts only certificates from New Jersey accredited organizations, and doesn't run manager courses itself.
Its current list, on the cottage food page, names 13 organizations, including ServSafe, NRFSP, StateFoodSafety and 360 Training. A 2020 department letter also listed Prometric, which isn't on the current list, so check with your local health department before choosing Prometric.
Who inspects you
Your local health department regulates restaurants in New Jersey. Cottage food operators selling from home also need the manager certification.
