Will Maryland require ServSafe certification statewide?
MDH's October 2025 Food Code fact sheet says the 2022 FDA Food Code will replace COMAR 10.15.03. Among its new requirements: each retail food service establishment must have at least one person in charge who is a CFPM on site during all hours of operation, certified through a program accredited by ANAB, such as ServSafe, Learn2Serve or StateFoodSafety. MDH says it hasn't set an adoption date.
Today's state rule asks the person in charge to make sure employees are trained in food handling and sanitation for their duties.
Montgomery County's Certified Food Service Manager
Montgomery County Code section 15-8(b)(2) says a food service facility must be under the immediate control of a Certified Food Service Manager. You bring an original certificate from an approved ANSI course, apply in person and pay a $50 fee. The county photo ID card is valid for up to five years from the date you completed the course.
The county's April 2026 fact sheet says online test certificates won't be accepted, so take a proctored exam in person. Cards from DC and other Maryland counties can be transferred.
Other counties
MDH says local health departments may require a certified food manager or similar training. Its list of local food contacts is the place to start.
