What ServSafe certification means, and which one you need

It means you've passed one of the National Restaurant Association's ServSafe exams. The meaning of a ServSafe certification depends on which one: ServSafe Manager is the accredited food protection manager certificate, while Food Handler, Alcohol and Allergens are shorter programs. For a food manager job, ServSafe Manager matches, and other accredited exams can count too, depending on your state.

What does each ServSafe certification mean?

How long each lasts, by ServSafe's rules and your state's, is on the renewal page.

ServSafe Manager or ServSafe Food Handler?

The FDA Food Code asks for the person in charge to be a certified food protection manager, who has passed a test that's part of an accredited program. ServSafe Manager is ServSafe's program for that. ServSafe Food Handler is a separate, shorter credential for employees, and it doesn't count as a manager certificate.

Which one you need depends on your job and where you work. Some states and cities also ask for food handler training for staff, so a business can need both.

ServSafe Alcohol certification

ServSafe Alcohol is about serving alcohol responsibly, not food safety, and it doesn't replace a food manager certificate. ServSafe offers a Primary online exam with no proctor, and an Advanced exam and print exam that need a proctor. Its alcohol exams are in English only.

Several states add their own material or a state quiz to the class, and required training hours vary by state. Check with your state's alcohol commission or local health department.

Who needs a food manager certification?

The Food Code is a model, not a law. It says the person in charge should be a certified food protection manager, except where the regulatory authority decides a business poses minimal risk. Each state, and in some places the county or city, decides whether that applies to you, how many managers need it and which exams count.

These states and cities have their own page here, each from the state's or city's own rules:
